Cibo e Vino- Sardinia at Teresa Caffe
Every Wednesday we will focus on a specific region. Chef Luis Martinez will seek imported and local ingredients to prepare tonight's specials. Our Wine Steward will select wines from this region that are varietally correct, of good value and most importantly, "have a sense of place". Sardinia is the leading producer of organic produce and one of the oldest wine producing regions in Italy housing 1 DOCG, 19 DOC and 15 IGT along with 4 DOP classifications. Along the coastline, clams, crabs, anchovies, squid and sardines are fished and used in a spicy soup called Burrida. It is said that there are more sheep than people in Sardinia, consequently, the interior has the best open pit, slow roasted lamb and pork in all of Italy and sheep cheese's like Pecorino Sardo is made. Despite these culinary delicacies, the main diet of a Sardinian is bread, cheese and wine (where's my airline ticket!) Grape varietals such as Cannonau, Monica di Cagliari, Nuragus and Vernaccia di Oristan are indigenous for wine production. Cibo e Vino, a true culinary experience!
